Recipes

As promised, here are a few of our favorites!

Chicken Enchiladas
4-6 chicken breasts (boneless skinless)
1 onion, chopped
1 clove garlic, minced
1 small can green chilies
16 oz tomato sauce
1 pound Monterey jack cheese, grated
12 flour tortillas (or as many as it takes)
1 pint whipping cream
Optional toppings:
Sour cream, salsa, guacamole, sliced olives, refried beans
*Boil chicken and cut into bite size pieces or shred. In separate pan, sauté onion, garlic, and chilies in oil. Add tomato sauce and chicken to onion mixture. Simmer 15 minutes. Dip flour tortillas in whipping cream (I pour it in a pie tin and dip tortillas in that) Fill with chicken mixture and top with cheese. Roll up and place in 9x13 pan. Pour remaining cream on top and sprinkle with leftover cheese. Bake at 350 for 30 minutes or until brown and bubbly.

Moms Hawaiian Haystacks
Combine in saucepan and simmer until heated:
2 cans cream of chicken soup
1 c. chicken broth
2 c. cooked chicken
Serve over rice
Top with any combination of the following:
Tomatoes, green pepper, pineapple, almonds, coconut, cheese, green onion, celery, chow mein noodles, and peas

This next one is our "current" favorite. It's just a side salad but it is so yummy! We've been having it almost every single night lately! Hope you like!

Spinach Peanut Salad
Combine in large bowl:
1 bunch spinach
1 cup seedless red grapes
½ can honey roasted peanuts
1 cup shredded Swiss cheese
Mix together salad dressing ingredients and pour over salad immediately before serving:
½ cup oil
¼ cup sugar
2 Tablespoons poppy seeds
3 Tablespoons vinegar
½ Teaspoon salt
½ Teaspoon dry mustard

And last but not least...

Easy Delicious Chili
Brown:
1 pound hamburger
1 chopped onion.
Add:
3 cans of tomatoes- 14.5 oz size cans. (we use fire roasted tomatoes for extra flavor)
1 4oz can chopped green chilies
2 15 oz cans of chili with beans
3 cans whole kernel corn
Simmer for 1 hour. Serve over tortilla chips and top with sour cream and grated cheddar cheese.
*This recipe is also great in the crock pot or as a baked potato topper!

that spinach peanut salad sounds so good! i feel the same way like we eat the same things week after week.
